MAKING & BAKING WITH MATCHA

I developed my love of baking from running around and playing with sugar and flour in my grandfather's Malaysian bakery. Having worked at top restaurants such as The Pier and Quay in Sydney, I decided to open my own dessert mecca, LuxBite, an Asian inspired French patisserie. My inspiration comes from childhood memories, and my love of travel and tea features frequently in my creations.

SOMMELIER’S SELECTION MASTERCLASS

I grew up in Compiégne (Picardie) city, in the north of France, where tea is mostly something you drank when you were feeling unwell or tied. After deciding on a career in fine dining, I studied hospitality and worked at Louis Xv by Alain Ducasse in Monaco, and with the talented team of Heston Blumenthal at The Fat Duck in the UK. During these times, I started to understand and appreciate the diversity of tea and became deeply curious about it. Having landed in the great city of Melbourne, I joined the Vue de monde team and now hold the position of tea sommelier. I’m excited to introduce people to the beauty of the world of tea - full of history, legends, kindness, generosity, terroirs, aromas and flavours.

BLEND YOUR OWN TEA

I grew up drinking Rooibos tisanes from birth and my passion and love for tea has grown with time. In 2014, I co-founded Impala + Peacock Artisan Teas based in Melbourne, and since its inception I have been involved in brewing, blending and cupping teas daily, in the pursuit of amazing tea and tisane creations. I am also passionate about tea education and spreading the love of tea. In 2018, I won the Australian Blind Tea Tasting championship title and went on to represent Australia in the World Tea Masters Cup in China, as well as the Australian Blending Championship title in 2017.

My mission is to make specialty tea accessible to all.
